Just did cast iron bacon wrapped pork medallions in olive oil and a pork dry rub. In another skillet I seared Brussels sprouts in the same sort of mix. Stirred in some “skinny pasta” 0 carb rice into the sprout pan. Took about 20 minutes start to finish and it was fantastic.

I did a CT heart scan over the weekend for my physical. I’m 46 years old. Good results are under 100. Mine was 103. So I meet with the doctor couple weeks. I exercised five to six times a week but I need to change the diet to where I’m on one forever.

Yes I can. I did it in 2022 for 6 months and lost 25 pounds. Then became a backslider. 🫤

If you can do without the beans you can do a pretty good 8 carb or so chili.

This may be useful. Thanks! I’m cooking some dinners for my diabetic, over 90 mom and am short on ideas. I’ve been eating low carb for some time, although have fallen off the wagon this Fall because the season change was making me want things with pastas and potatoes. Took them long enough to get to some beef recipes, though!(just a couple at the bottom of the list).

Welcome to the club... my body is becoming resistant to insulin.
I now eat a diabetic diet, which really is pretty good eating. I just had to cut out simple carbs and learn to be judicious with some complex carbs. No snacks. Lots of vegetables, mostly greens, no juices but whole fruit in moderation is okay.
There is a boatload of literature out there. Dr. Fuhrman has put out some good resources and recipes.
