This energising mint, creamy avocado and zesty lime smoothie is the perfect refreshing drink to win over any green-smoothie sceptic. Invite your friends over, serve up a double or triple batch of this green monster, and toast to glowing energy and health. If you are feeling wild, add a splash of sparkling water (and optional white rum) to make an alternative to a classic mojito.

Prep time: 8 minutes, plus overnight freezing time for the watermelon (optional)

INGREDIENTS

  • 75g watermelon flesh, cut into cubes (optional, but recommended)
  • 30-50g baby spinach or other leafy greens
  • 250ml coconut water or water
  • 1 large sweet apple (such as Gala)
  • 3 tbsp avocado flesh
  • 1-2 tbsp fresh lime juice, to taste
  • 5-10 large mint leaves, to taste
  • 5 large ice cubes

METHOD

  1. Freeze the watermelon cubes, if using, overnight or until frozen solid.
  2. In a high-speed blender, combine all of the ingredients and blend until smooth. Pour into a glass and serve.
